<p>Christy's friend Brett Spangler had a birthday party a couple month's ago. He's a foodie kind-of-guy, makes his own vanilla, infuses his liquors, and doesn't need recipes. So what did he do for his birthday?</p>

<p>I've heard a lot about this roasting pig thing, but have never had a chance to partake in it myself. Needless to say, I was hyped about the experience.</p>
<p>Brett put his pig in a Caja China, with hot coals over top, and let that baby roast for a few hours. When the pig was done, it glowed with bright red flaky skin.</p>

<p>He sliced up some servings, and people were off with whole plates full of tender pork goodness. I got to do one of these.</p>

<p>We then finished it off with some dessert genius. Brownie + Chocolate Chip Cookie + Oreo = This...<br />

<p>There's a new tradition I want to start at the Ceberry Household, and its called Belgian Waffle weekends.</p>

<p>Why?</p>
<p>Because we have a fancy Belgian Waffle Maker and after making this recipe, which is done the traditional way with yeast, you'll want more waffle in your life too.</p>
<p>Here we go a-wafflin'...</p>
<p><strong>Weekend Waffle Recipe (adapted from Mark Bittman)</strong></p>
<ul>
<li>½ tsp instant yeast</li>
<li>2 cups all-purpose flour</li>
<li>1 T sugar</li>
<li>1/2 tsp salt</li>
<li>2 cups whole milk</li>
<li>8 T unsalted butter, melted and cooled slightly</li>
<li>1/2 tsp vanilla extract</li>
<li>2 large eggs, separated</li>
<li>Olive Oil for brushing on waffle iron</li>
</ul>
<p>Grab a large mixing bowl and add all the dry ingredients. Then stir in the milk, butter, and vanilla. Cover the bowl with plastic wrap, and let it stand overnight at room temperature. When you unwrap the batter the next morning, you'll be greeted to this puff-master delight. Yum!</p>

<p>Now separate the eggs. Stir the yolks in the batter and beat the egg whites with an electric mixer until you have soft peaks.</p>

<p>Gently fold the egg whites into the batter mixture until just combined. </p>
<p>Now preheat your waffle maker. We use a <a href="http://www.amazon.com/KitchenAid-Pro-Line-Waffle-Baker/dp/B003AM7KKI/ref=sr_1_1?ie=UTF8&amp;qid=1321808554&amp;sr=8-1">KitchenAid Pro Double Waffle Maker</a> and it's La Bomba.</p>
<p>I brush on some olive oil on the grates before pouring the batter, and set my waffle iron timer to about 4.5 minutes. Once the iron is ready, pour in enough batter to nearly just cover the top of the grates. Then flip and let your waffle iron go to work.</p>

<p>There were lots of event's going on this past weekend, and I soldier'd it out and went to a different one each day.</p>

<p>This was my first Con since high school.  For those that didn't know, my earliest memories are of making comics with Dinosaurs, Voltron, and Transformers in Kindergarten.</p>
<p>I spent the next 13 years drawing with friends Chris Mosley, Danny Doyle, and John Ledbetter.  We had drawing session sleepovers, collaborated on murals on canvas and giant-size sketch pads.  We even made comic books together.  Our mom's would copy them for us at their work, and we sold them in the cafeteria in the mornings and at lunch.</p>

			<content:encoded><![CDATA[<p id="top" />Christy saw an ad for a Trailer Food Festival going on in San Antonio, and we had nothing else better to do so we headed down South to hit it up for a mini-get-away.</p>

<p>Four years of living in Austin, and not once had we traveled to our closest neighbor.  So we pricelined a hotel downtown, looked up a few destinations, got in the car and left.  But before the drive, we had to charge up on some macaroons and coffee from <strong>La Patisserie</strong>.</p>

<p>San Antonio is just about an hour and a half drive from us, and our first stop was the Trailer Food Festival that motivated us to make the trek.</p>

<p>We went to this festival with the lofty expectations it'd be like Austin's Gypsy Picnic.  But this festival was way smaller, with only a handful of trailers and an even smaller variety of foods (half of the trucks were BBQ ones).  We planned to spend a few hours at this thing, but instead probably spent around 30 minutes.  That's not to say we didn't find a couple good items on the menu.</p>

<p>We then killed some time at an outdoor mall area that was very nice and reminded us of a larger, more expansive Domain.  Our stomachs started grumbling so we headed to dinner at our next stop, <strong>Los Barrios</strong>.  Famous for their Puffy Tacos, Los Barrios is a fun, very casual, no frills restaurant with some soul.  We ordered a couple margaritas that were very tasty with unique flavors such as this Guava margarita. </p>

<p>The menu was pretty large and there were a lot of unique items in it.  But I stuck to what brought me there and ordered the Puffy Tacos.  Christy got a little more adventurous and ordered what sounded like a Mexican Turnover.  Solid move.</p>
<p>The tacos were very good but not too much better than the version I'm used to having at Vivo in Austin.  So I wasn't blown away by them as much as I was hoping.  Christy's entree was pretty amazing though.  The cheese was melty, the bread was flaky, and it was just a spot-on dish that made your mouth happy.</p>

<p>We then went downtown to checkout the scene here.  We walked up and down the Riverwalk and around a few of the parks that off-shoot from it.</p>

<p>After that brief detour we returned to the Riverwalk and did some more exploring.</p>

<p>We caught a glimpse of a Spanish dance show, and cruised past more restaurants until we got to a point where we had to think about turning around before getting too far from our hotel.  Rather than take the same walk back, we walked up toward street level for a change of pace.  Street-side at night on the weekend was a bit of a tourist trap and we found ourselves often fighting through crowds and street loungers.  We were keeping our eye out for a cool lounge or wine bar type place and saw nothing that looked very interesting until Yelp helped us out and led us to a neat place called SoHo.  </p>
<p>They had a big black board filled with all their wine and martini concoctions so we tried a few out and were left fairly impressed.  On the way back to our hotel, we saw the Alamo but failed to snap any quality pics with our shaky hands and lack of light.  But don't worry Alamo, I'll remember you.</p>
<p>The next morning, we hit up Magnolia Pancake Haus which I read was recently featured on Diner's Drive-in's and Dives.  We didn't get there early enough to beat the church crowd so we had quite a wait but man, it was worth it.  So many things sounded good, so we got a little carried away and ordered way too much...</p>

<p>The panokoeken (seen in the middle of pic above) was something featured on the show and it was basically like an apple caramel pancake.  Probably a little rich and heavy, but my sweet tooth didn't complain.  Everything was awesome, and we made quite a dent in that mini buffet of food we ordered.  I'm marking this place as a must-visit next time I'm in the area.</p>

<p>With full stomachs and our weekend clock winding down we headed back home to good ol' ATX and wrapped up our little getaway.  See ya SA, I hardly knew ya.</p>
